another special sarah recipe

Tonight at dinner, Sarah was perusing the back of the crouton package and proclaimed that we should make a spinach salad following the recipe she found there. I was surprised as she doesn't usually get excited about spinach. The recipe is as follows:
  • 1/2 c. garbanzo beans, rinsed
  • 1/2 small red onion, sliced thin
  • 1 c. halved cherry tomatoes
  • 1/2 c. Italian dressing
  • 1 pkg. spring mix or baby spinach leaves
  • 2 hard boiled eggs, peeled and cut into wedges
  • 1 c. seasoned croutons
She went on to made the necessary modifications in order for her to actually eat the salad.
  • "We shouldn't put any of these beans in it."
  • "Let's leave the red onions out."
  • "We are not using tomatoes."
  • "I don't like Italian dressing, so let's not put that in."
  • "We're not putting any leaves or anything in it. We could probably use lettuce and maybe a few pieces spinach cut in really small pieces."
Her new and improved recipe would then read something like this:
  • 2 hard boiled eggs, peeled and cut into wedges
  • 1 c. seasoned croutons
  • some lettuce
  • a few pieces of spinach cut in really small pieces
While it sounds divine, I'm not sure we'll actually toss this salad together. And, really, can we even bother to call it spinach salad at this point? I think not. Perhaps Sarah's Special Salad would be a more fitting name.
